Tasting Notes
The Fenocchio Dolcetto d’Alba has ruby red colour with nice violet reflections. Its aroma is fresh and pleasantly fruity. In the mouth the wine is dry, pleasantly bitter and harmonic. The low acid and high tannin nature of Dolcetto makes it the best wine to pair with either a first or second courses, as well as with hors d’hoeuvre. Traditional fermentation where the grapes macerate without adding yeasts for 10 days in steel tanks. Thereafter, the wine spends 6 months in stainless steel tanks, and matures in bottle.
